Hummus is SO good, healthy and ridiculously easy to make. I particularly like making hummus because you can use pretty much any extra ingredients that spark your fancy. This means its easy to toss together with whatever you have in the fridge and impress your guests or just devour it all alone.
I love spice and I love feta. Luckily I had jalapenos and feta on hand. This hummus is really stinking tasty. I mean really really tasty. It was stupid easy to make and to boot it is healthy. This is a win win situation.
You will need:
1 package Pita bread
2 tablespoons plus 1/4 cup olive oil
1 teaspoon red chili flakes
1 ½ teaspoons salt
1 ¼ teaspoons freshly ground black pepper
1 (15-oz can) white beans or cannellini beans
1/2 of one de-seeded jalapeno
2 tablespoons fresh lemon juice
1 garlic clove
1/3 cup of feta
Heat your oven to 400˚ and cut up your pita bread like this.
Brush pita chips with olive oil and place on baking sheet. Sprinkle with 1 teaspoon red chili flakes. Place in oven and bake for 10 minutes or so until nice and crispy. These REALLY make a difference.
Squeeze 2 tablespoons worth of lemon followed by cutting up 1 garlic clove and cutting your jalapeno in half and de-seeding.
Set aside 1/2 de-seeded jalapeno, 1/3 cup of feta, 1 chopped garlic clove and 2 tablespoons of lemon juice
Drain your 15 oz can of cannellini beans
Toss in all the things you chopped and throw in the blender, add in 1 ½ teaspoons salt, plus
1 ¼ teaspoons freshly ground black pepper. (Sorry guys half of my pictures uploaded as black so I don’t have these steps pictured 😦 ) Blend until combined then add additional 1/4 of olive oil and blend till smooth. You should have removed your pita chips at this point mmmmmm!!! Ready to eat.
Tell me that was not embarrassingly easy to make.
