Cannellini Bruchetta


I have been SO behind on blogging ! It was my birthday so I had a week full of activities and cooking took the back burner.

Today I wanted something light and tasty, something like bruchetta except not. This is totally healthy, light and tasty. It is filled with basil, bell peppers beans, parmesan, garlic and tomatoes it has just the perfect amount of kick. This is perfect for a picnic, or a light snack, so enjoy it!

You will need:

1 cup of fresh grated Parmesan

Unexpected Cheddar cheese from Trader Joes (optional)

1/2 cup basil

1 orange bell pepper

1 Roma Tomato

15 oz can cannelinni beans

3 garlic cloves

1 pinch of salt

2 cap fulls of balsamic vinegar

olive oil

1 pack of crostini


Pulse your cannelinni beans in sporadic pulses, you just want to break them down just a little!


Removing the beans, pulse 1 orange bell pepper with the same sporadic pulsing.


Do the same with 1/2 cup basil


Chop one Roma tomato


Combine in a bowl followed by 3 pulsed LARGE garlic cloves. The garlic is super important in this it gives it the extra kick it needs!


Add 1 cup freshly grated parmesan


Pinch of salt


2 cap fulls of balsamic vinegar. Mix it all up and let it sit while you prepare the crostini.


Turn on your broiler and olive oil the bread. I personally thing this sourdough I used was to soft. Next time I would use a true crostini but really any bread will do.


Toast till super crunchy


Put a piece of Trader Joes unexpected cheddar cheese on each crostini. I’m telling you this cheese will change your life. I could eat the entire brick plain. This step is not necessary but it is SO GOOD!! You could use something like mozzarella to If you can’t find this cheese, but I’d suggest looking.


Put the mixture on top and Ta da!
