Bruschetta Spaghetti

It’s the end of September and my garden is still exploding with tomatoes. I would say, that this is the first year that our garden has been this successful and I am so incredibly proud of all its bounty. It seems like I’ve got tomatoes growing out of my ears! These tomatoes so plentiful and so beautiful are growing in all the different colors. The gift of this harvest make me so happy. Sometimes, it feels wrong to cook them; ruining the integrity of the wholesome crop, so this recipe really helps me overcome that struggle! When I was little, I used to go get pasta with my Granny Mary at this great Italian place. Every single time, we would both order angel hair pasta topped with fresh bruschetta. To this day, my love for this dish remains unchanged. The tomatoes from my garden have come in handy in recreating this timeless, fresh dish that I adored as a little girl. I wanted to update it a little bit so I decided to add feta and obscene amounts of Parmesan to give it some creaminess.   Oh boy, was it a good choice! Ina Garten happened to have a recipe similar to this childhood favorite, so I was able to pull inspiration from her! Enjoy!

I love all the colors, just gorgeous!

2 cups heirloom cherry tomatoes, chopped

6 large cloves of garlic, minced

1/3 cup basil leaves, julienned

1/2 teaspoon red pepper flakes

1/2 cup olive, plus a tablespoon for pasta water

few pinches of black pepper

1 pack of pasta, or angel hair

1 cup Parmesan, plus extra for serving

1/2 cup feta, plus extra for serving

Directions:

1.Chop tomatoes and add to a large bowl

2.add garlic

stack basil leaves

roll up the stack and cut vertically

3.add julienned basil leaves

4. add pepper

5.add red pepper flakes

6.add 1/2 cup of olive oil

7.mix ingredients cover bowl and set aside

8.boil water with a splash of olive oil, add the pasta and cook till al dente

drain the pasta well! Nothing I hate more than adding wet noodles too my sauces so let it really drain.

9.add the cheeses

10.add the pasta to the tomato mixture mix it up and add extra basil

  1. This is definitely a must make for me. I love pasta, and the addition of fresh tomatoes, basil, garlic and all the wonderful cheese…..my mouth is watering just thinking about it all. And best of all is that I have all the ingredients on hand.

I really like the vibrancy of this dish with the red of the tomatoes, the green of the basil and the sheen the oil gives.
