Pumpkin Spice Biscuits

Who has a good old faithful recipe – that they know by heart – and can easily whip up to please their friends and family? I do! This is such a simple, go-to recipe for me! These biscuits are famous in New Zealand and have coined the title, “Hokey Pokey Biscuits.” The original recipe results in a simple buttery cookie, however, being that it is October, I decided to add brown sugar and pumpkin pie spice. These “biscuits” are light,  buttery, and absolutely delicious with their perfect spiced flavor. This recipe is quite easy, so I would recommend getting your kids involved! It is that simple! Enjoy friends!

You will need:

1 stick of butter

1/2 cup brown sugar plus 1 tablespoon

1 generous tablespoon light corn syrup

1 tablespoon half-and-half

1 1/3 cups plus 1 tablespoon all-purpose flour

1 teaspoon baking powder

1/2 teaspoon pumpkin pie spice

 preheat the oven to 350˚

To a medium sized pan add the following:

1 stick of butter

1 tablespoon half-and-half

1/2 cup brown sugar plus 1 tablespoon

1 generous tablespoon corn syrup

Stir continuously until butter melts and it begins to boil. Remove from the heat and let cool

 In a bowl add the following:

 1 1/3 cups plus 1 tablespoon all-purpose flour

 1 teaspoon baking powder

1/2 teaspoon pumpkin pie spice

Once butter mixture is cooled, add to flour mixture.

Mix with hands

Roll up small balls on your hands and place on cookie sheet with silpat

Press down with fork

bake in preheated oven for about 15-20 minutes

transfer to wire cooling rack

Serve! So understated and so delicious! Serve!! So understated and so delicious! I like mine with some English tea, perhaps some coffee?
