Broccoli Cheddar Soup

This soup is not for you if you are trying to loose weight. This soup is for you if you love to eat really good food. Broccoli cheddar soup is a classic, staple comfort food that everyone loves. I added some Tabasco to me mine that gives it a standout kick that you won’t want to miss it! Enjoy friends.

You will need:

1 yellow onion loosely chopped

1 stick of butter (1/2 cup)

1/2 cup of flour plus 1 tablespoon

4 heads of broccoli cut into florets

4 cups of whole milk

2 cups of half-and-half

1 pinch nutmeg

1 tablespoon pepper

a few pinches of salt

a few dashes of Tabasco

4 1/2 cups of extra sharp cheddar cheese

4 fingerling potatoes

Melt butter in a large pot.ImageImage

Add entire yellow onion.Image

Add 1/2 cup of flour plus 1 tablespoon. ImageImage

Add 4 cups of milk.

Add 2 cups half-and-half.Image

Add a few pinches of salt.Image

Add a dash of nutmeg.Image

Add broccoli florets and diced potatoes (I forgot to add the picture of potatoes) . Put flame on low, cover with lid, and cook for 30-35 minutes stirring occasionally.Image

Add 4 1/2 cups shredded cheddar.  Image

Add to blender.

Pour soup back in pot add 1 tablespoon pepper.

Add a few dashes of tabasco.

Stir consistently for about 8 minutes. Cover with lid and cook for 20 more minutes, stirring occasionally. This will help thicken the soup. You can cook until the consistency is right for you. It should be fairly thick.

Garnish with pepper, extra cheddar and chives! The chives add an extra nice crunch.
