Roasted Pepper Pasta

ImageSome foods I could eat absolutely everyday. Such foods include tacos (lots and lots of tacos) and pasta (lots of different kinds of pasta).This pasta officially has made it onto the list of everyday kind of foods. I love the consistency of this pasta sauce so much. Everyone who eats it says it reminds them of an amazing bolognese. It is filled with glorious things like roasted peppers, half-and-half, white wine and a whopping 5 cloves of garlic. Have I won you over yet? I promise that your family, your friends, your neighbors, your Aunt Marge, and heck, even your taste buds will love you forever if you make them this sauce.Image

You will need:

2 bags of mini penne pasta

1 yellow onion diced

4 large garlic clothes

3 large red bell peppers

28 oz can crushed tomatoes

Scant 1/3 cup pine nuts toasted and pureed

1 cup of half-and-half

1/3 cup white wine plus 1/4 cup because I wanted an extra kick!

3 tablespoons of olive oil, plus a few drizzles more here and there

3 big pinches of salt

1/2 teaspoon red chili flakes

1/2 cup parmesan

1/2 cup chopped parsley

Preheat your oven to 400˚. Drizzle 3 large peppers with olive oil and bake until skin turns black about 30 minutes.

1424497_10152169817753708_252513699_nGrab a big pan. ImageDrizzle the bottom of the pan with some good olive oil.ImageAdd 1 large chopped yellow onion.ImageAdd 4 cloves of crushed garlic. Cook until onions start to sweat, stirring occasionally. ImageAdd 1 28 oz can of pureed tomatoes. ImageAdd 1 cup of half-and-half. ImageAdd 3 big pinches of salt. ImageAdd 1/2 teaspoon red chili flakes. ImageAdd in 1/3 cup plus 1/4 cup of white wine.ImageAdd 1/2  cup shredded parmesan, oooooh ya dawgy. ImageStir all the glory, put on a low flame and let cook a bit. ImageMeanwhile, grab a scant 1/3 cup of pine nuts and throw them in a pan. ImageOn a medium flame let them cook, stirring them, till there a bit toasted like the picture. ImageThrow them in a food processor and blend them up! ImagePour them into the sauce, mmmmmm ya! This will make the consistency all bolognese-y without being beef-y. ImageAdd 1/2 cup of parsley, stir it all up! Make sure the flame is nice and low because your gonna be ignoring the sauce for a second. ImageAt this point your peppers should be ready. You should start boiling your pasta water at this point, getting those noodles all ready! ImageCut off the tops remove the seeds and slice em’ up! ImageThrow peppers into the food processor and blend them up till they are a paste! ImageAdd them to your sauce! ImageDrain your pasta and pour it on top of the sauce. ImageBefore mixing throw some parmesan on top! Refrain from stirring, let the cheese melt a bit. OOH GLORY. ImageNow, get ready, GO! STIR STIR STIR! The goodness will be overwhelming you, I am sure of it. Now serve it baby, garnish with more parsley MORE parmesan and dive in. Image
