Sriracha Corona Lime Chicken

1012680_10152192185068708_1613732466_nMy love for Sriracha is no secret. I love to put it on anything; from quesadillas to broccoli, to mac-n-cheese, and now chicken. This chicken is crazy, bonkers, nuts good. Don’t take my word for it – just make it yourself! Image

You will need:

6 small chicken breast

1 red onion

1 24 oz Corona

2 limes

1/2 lemon

salt

pepper

1/4 cup Sriracha

drizzle of olive oil

cilantro for garnishing ImageChop one red onion into larger pieces. ImagePlace the chicken and onions in a large bowl. ImagePour pretty much the entire Corona in the bowl.ImageSqueeze the juice of one entire lime into bowl. ImageAdd 1/2 of a lemon’s juice. ImageAdd 1/4 cup of Sriracha. ImageMix it all up, cover with tin foil, and let sit in fridge for an hour (or as long as you would like, but at least an hour). ImageRemove the chicken from the bowl after an hour. ImageIn a large pan drizzle some olive oil. ImageRemove the onion from the sauce and sauté till soft. ImageAdd in the chicken. ImagePour in the juice. ImageSprinkle a pinch of salt on each breast. ImageAdd a few dashes of fresh pepper. Slice the lime and place one slice on each breast. Sprinkle some cilantro in. ImageImagePut lid on chicken, and cook for about 20 minutes. Keep checking though! The chicken cooks very fast! ImageServe! The juices were so good, we poured some with the onions on a bed of raw cabbage and it was delicious!
