Kale and Feta Salad with Creamy Avocado, Lemon, Garlic Dressing

ImageI love eating salads but they quickly loose their appeal. I can only handle mixed greens and balsamic vinaigrette so many days in a row before I loose my mind. I recently discovered that making your own dressing is so easy and far more satisfying! When you eat a salad, it’s to be healthy, but often dressing is filled with so many mystery ingredients and calories, and you are ultimately doing your body a disservice. Another bummer about salads is that they are often so bland, lacking any kick that leaves you craving more. This dressing has that kick and creaminess that makes you totally feel like you are indulging! Whenever I eat this salad I feel like I am being bad but really I am being oh so good! Not only is the dressing amazing, but this salad is packed with nutrition! The kale adds another kick in itself because of the slight spice kale has. Added with a little crunch from cabbage and sweet peppers – and of course some feta – this is the end-all-be-all of salads! Enjoy.

For the dressing: Makes 1 1/2 cups of dressing, best served fresh. 

1/2 cup of fresh lemon juice

2 avocados

5 garlic cloves

1/4 cup olive oil

1/2 teaspoon kosher salt

few grinds of fresh pepper

For the salad:

2 hand fulls of finely chopped kale

1/4 head of cabbage

1/4 head of iceberg lettuce

1/2 heirloom tomato

4 mini sweet peppers

hand full of feta

ImageImageStart by squeezing 1/2 cup of fresh lemon juice.ImageSlice your avocado in half, then slice each half in half again. ImagePeel off the skin! Such an easy way to remove avocado skin. ImageImageAdd a few slices of the avocado to your food processor. ImagePour in some lemon juice. Puree until completely smooth. You may have to do this in a few steps because it will not completely puree if you add all the avocado and lemon juice at once. Add some avo and lemon juice puree then place in a bowl add a few more slices of avo and lemon juice, remove and so on. ImageImageIn my last batch of avocado and lemon I added the garlic cloves and blended the heck out of them! It may be easier to just add the garlic after using a garlic crusher, your choice! ImageAdd 1/4 cup of olive oil and mix, mix, mix! ImageAdd a 1/2 teaspoon of kosher salt. ImageAdd a few dashes of fresh ground pepper and mix it up! You are done!ImageIn a salad bowl add 2 handfuls of kale. ImageAdd 1/4 of a head of iceberg finely chopped. ImageAdd 1/4 of a head of cabbage finely chopped. ImageSlice 3-4 mini sweet peppers.ImageEver wandered how to dice a tomato, well here you go! Slice your tomato in half.ImageNow slice a chunk of the inner most part of the tomato off. ImageLay down like you never sliced it!ImageNow slice the tomato horizontally and vertically and you have diced tomato! ImageToss your salad thoroughly with 1/2 cup of the dressing. ImageAdd all the amazing ingredients and serve! Image

  1. This salad looks wonderful! I love the dressing, too. I make a batch of a different kind of dressing every week, and use it for our salads at dinner. I agree with you about store bought dressings. Once you start making your own, you don’t want them anymore!
