Raspberry Donut Muffins with Vanilla Glaze

I imagine many of you are not as blessed with the weather right now as I am in southern California, today was a whopping 85˚. I truly feel for you guys in the blistering cold, I cannot imagine.

Raspberries and muffins are traditionally a summery delicacy not exactly what you picture yourself eating in January, in the freezing weather. However with this warm weather we are experiencing in SoCal, a light summery muffin sounded delightful. I decided to kick it up by giving my muffins a donut feel by adding vanilla glaze, and a light raspberry hue. So what do you say, whether your freezing off your heiny in Oklahoma or sweating with me in California make these with me! Why not brighten the mood with some sweet raspberry donut-ty muffins I am sure your loved ones will not be complaining, all 12 of mine were gone within an hour. Happy baking.You will need for the batter:

-1/4 cup butter

-1/4 cup vegetable oil

-1/2 cup granulated sugar

-1/3 cup brown sugar

-2 large eggs

-1 1/2 teaspoons baking powder

-1/4 teaspoon baking soda

-1 teaspoon cinnamon

-3/4 teaspoon salt

-1 teaspoon vanilla extract

-2 2/3 cups all-purpose flour

-1 cup half-and-half

1 cup of raspberries frozen or fresh

1/2 tablespoon of addition sugar for the raspberries

For the Glaze:

-3 tablespoons butter; melted

-1 cup confectioners’ sugar; sifted

-3/4 teaspoon vanilla

-2 tablespoons hot water

In a large mixing bowl add 1 cup of sugar. DSC_0090

Add 1/2 cup of brown sugar.DSC_0091

Add 1/4 cup of vegetable oil.DSC_0092

Add 1/4 cup of soft butter. Mix until all is combined. DSC_0094

Add 2 eggs to the mixture.DSC_0095

Add 1 teaspoon of cinnamon. DSC_0096

Add 1 1/2 teaspoons of baking powder. DSC_0097

Add 1/4 teaspoon baking soda. DSC_0098

Add 3/4 teaspoons of salt. DSC_0099

Add 1 teaspoon of vanilla extract. Mix until combined. DSC_0100

Add 2 2/3 cups of flour.DSC_0101

Add 1 cup of milk and mix until combined. DSC_0102DSC_0103Thoroughly butter your muffin pan. DSC_0104

Add muffin papers. DSC_0105

In a small pan add 1 cup of raspberries.DSC_0107

Add 1/2 tablespoon of sugar cook on a medium flame stirring and smashing the raspberries with a spoon. DSC_0108

When the raspberries look like this add to the batter. DSC_0109

Stir the raspberries into the batter. DSC_0110

Use an ice cream scoop!DSC_0111

Put in preheated oven and  bake for 15-17 minutes. DSC_0114

Remove from pan immediately and let cool. Start making your glaze right now! DSC_0115

In a mixing bowl add 1 cup of powdered sugar. DSC_0116

Add 3 tablespoons of melted butter.DSC_0117

Add 3/4 teaspoons of vanilla.DSC_0118

Add 2 tablespoons of hot water, mix until smooth.DSC_0119

Dip your almost cool muffin into the glaze and yumm!DSC_0120

  1. Yum! We don’t have 85 degrees up here in Vancouver, but it is gorgeous and sunny and it sure does make you feel like eating summery foods! I think I will join you and make these! Thanks!

  2. Great measuring spoons! A nice detailed step by step recipe, it must be fun to make muffins and have them stocked up in a tin to eat to your hearts content. I can picture this with some nice milky tea.

  3. Look and sound amazing. I love that these are all ingredients readily available at my home. Just a small note, you’ve said add 1 1/2 teaspoons of baking soda and then say add 1/4 teaspoon baking soda. Should it be baking powder?
