Broiled Zucchini and Potatoes with Parmesan Crust


These potatoes and zucchini are absolutely amazing. When you coat potatoes and zucchini in parmesan, feta and garlic, you cannot go wrong! This delightful dish works perfectly as a side dish for dinner or even a breakfast staple, enjoy!


You will need:

4 potatoes

2 tablespoons of olive oil

2 small zucchinis

few pinches of salt and pepper

2 garlic cloves

1/4 + cups of fresh grated parmesan

Few sprinkles of feta (optional)

1/2 teaspoon chili flakes

Start by boiling 4 potatoes, in these type of potatoes I like the skin if you do not peel them first!


Meanwhile chop up your two zucchinis!


When the potatoes are done boiling and nice and tender remove them and slice them.


Salt and pepper your zucchini thoroughly.


Add 2 tablespoons of olive oil to a skillet with a medium flame.


Add your zucchini and sauté for about two minutes.


Add your sliced potatoes.


Add 1/2 teaspoon of chili flakes.


Add two minced garlics, continuously stir around for 12-15 minutes! Preheat your broiler.


Once your potatoes and zucchini are done cover a baking sheet with tin foil. Place the potatoes and zucchini on the tin foiled baking sheet.


Shred the desired amount of parmesan over the potatoes and zucchini, about 1/4 cup. I sprinkled some feta for extra creaminess, SO GOOD! Keep in the broiler for about 4 minutes or until golden brown!
