Today was very green. Breakfast was a kale smoothie, lunch was avocado toast, and dinner was salsa verde. It rocked and it was healthy. Avocado toast has been one of my favorite foods since birth. I came into this world eating avocado, it is in my DNA. Avocado toast with a little lime, sea salt and a few chili flakes is really truly magical – it’s up there with grilled cheese for me. Anyways I know it is simple but I love it SO much I had to shout it from the rooftops by sharing with you. Enjoy!
I love eating salads but they quickly loose their appeal. I can only handle mixed greens and balsamic vinaigrette so many days in a row before I loose my mind. I recently discovered that making your own dressing is so easy and far more satisfying! When you eat a salad, it’s to be healthy, but often dressing is filled with so many mystery ingredients and calories, and you are ultimately doing your body a disservice. Another bummer about salads is that they are often so bland, lacking any kick that leaves you craving more. This dressing has that kick and creaminess that makes you totally feel like you are indulging! Whenever I eat this salad I feel like I am being bad but really I am being oh so good! Not only is the dressing amazing, but this salad is packed with nutrition! The kale adds another kick in itself because of the slight spice kale has. Added with a little crunch from cabbage and sweet peppers – and of course some feta – this is the end-all-be-all of salads! Enjoy.
Grilled Cheese has always been one of my splurge foods; there’s not much better than some good old cheddar melted on quality bread. Since a young age, I have been eating this exact sandwhich. It is out-of-this-galaxy good, or as the title would explain, IT IS God’s gift to cheese lovers of the universe. Avocado, thinly sliced red onion, a big old heirloom tomato, some whole grain dijon for added crunch, and two of my favorite cheeses – cheddar and provolone – all wrapped into one. I have just described perfection. Go big or go home, if you’re splurging on a grilled cheese, it might as well be this one!
Almost nothing is better than a hearty bowl of soup on a cold fall day. I also happen to think that avocado, lime and feta cheese make any meal 100 times better. Combine these two simple truths and we get something truly divine. Chicken soup with lime, avocado and feta. Wow! It’s almost too good for words. Sometimes life can turn into a mindless routine which, I must admit, I am completely guilty of. In the daily routine of my life, I find myself searching for inspiration. I hate to say that, while being swept up by stresses of life, I am constantly losing site of the beauty in things that surround me. We live in a beautiful world! I just need to get myself off the computer and be a part it. For a few hours, it’s nice to release myself from the demands of text messages, emails and Instagram updates. Inspiration, for me, usually comes in the form of Pinterest posts, Tumblr blogs and beautiful pictures I find online, which, don’t get be wrong, are great sources. However, today while I was trying to figure out what I wanted to cook or bake, I found inspiration in my own surroundings. I got in my car and just drove. It really is a freeing feeling when you can just release yourself from all consuming social medias sites, breathe in the fresh air and listen to the noises that surround you. Something I love to do is drive through neighborhoods and look at houses. My mom and I have always done this together. Today I drove through some Los Angeles neighborhoods and saw some beautiful houses that I envy! I marveled at the intricate landscapes and noticed charming details such as front doors, interesting gates and blossoming landscapes. Something as simple as this drive was exactly what I needed and left me feeling relaxed, refreshed and inspired. The sunshine, breeze and flawless landscapes left me craving a backyard BBQ. Nothing sounded better than eating a classically delicious meal in the fading sunshine. I wanted corn, chips and salsa and a fresh burger filled with quality ingredients. This burger is my boyfriends favorite because their are so many different flavors. It is spicy yet sweet and so full of flavor. It is really amazing and I recommend that you make it tonight! With the Summer coming to an end, and the days are getting shorter, make sure to take time to slow down and become inspired again. Even if it’s in a short stroll around your block or a quick drive up the coast, it can change your outcome in the kitchen big time!
