Salsa is a staple in my life, especially when I am trying to live a healthier manner. Salsa is good to me even when I am in the mindset of eating whatever the heck I want, so I eat it while I’m being healthy and I don’t feel deprived! The amazing thing about salsa is that it is guiltless and makes everything THAT much better. If I am eating vegetables, you better believe I douse it in salsa. Pretty much everything is an opportunity for me to eat salsa! I have always been a red salsa girl; the tomato, cilantro, onion, jalapeño, and lime combo is my go-to jam. Today I wanted to switch it up and get out of my usual comfort routine, so I bought every green chili I could find in the grocery store. The results were stellar and just absolutely beyond mouth watering, and – guess what – SO healthy! Since I am on a health train extreme, I home made cashew cheese, and let me tell you SUPER good! I used fresh corn tortillas, cashew cheese, and this green salsa, and it was to good to be true! Vegan and gluten free! I love eating salads but they quickly loose their appeal. I can only handle mixed greens and balsamic vinaigrette so many days in a row before I loose my mind. I recently discovered that making your own dressing is so easy and far more satisfying! When you eat a salad, it’s to be healthy, but often dressing is filled with so many mystery ingredients and calories, and you are ultimately doing your body a disservice. Another bummer about salads is that they are often so bland, lacking any kick that leaves you craving more. This dressing has that kick and creaminess that makes you totally feel like you are indulging! Whenever I eat this salad I feel like I am being bad but really I am being oh so good! Not only is the dressing amazing, but this salad is packed with nutrition! The kale adds another kick in itself because of the slight spice kale has. Added with a little crunch from cabbage and sweet peppers – and of course some feta – this is the end-all-be-all of salads! Enjoy.
I know it’s a little late but I am finally ready to start the new year right by taking care of my body and being more active. One of the most important things in life is how you feel about yourself. When you are confident and feeling good about yourself, you’re more likely to be proactive, friendly, and work harder. Isn’t this so true!?Whenever I feel down on my looks, or uncomfortable in my body, I am 100% less friendly because I am self-conscience! I find myself avoiding people in the store, I am less likely to be social, and am totally unmotivated. All of these things might sound dumb, but I am positive every single one of you feels that way from time to time. You know when you have been consistently healthy and you feel like your on top of the world? I am ready to experience this feeling.
A sure fire way that I have discovered to really help me kickstart my healthy momentum is juicing! Everyone has their own opinion about juicing, but I am a complete advocate. I have seen it truly transform peoples’ lives. Juicing is a great way to get the most nutrients out of foods! Since you are juicing and just sucking out the pure nutrients, your body does not have to digest any food, so it’s much easier on your body. This is also beneficial because when you juice up otherwise bland vegetables, they somehow always comes out tasting sweet. I know that health should be a lifestyle change and juicing is not permanent, but like I said, juicing kick starts me into health mode. Let’s be honest, you guys are not going to eat a handful of raw kale and a raw beet anytime soon. Well, if you’re juicing, you can and will, and thats the beauty of it! I grew up in a very healthy home. My mom was always a health nut. Some of her favorite meals to this day include brown rice with chopped tomatoes and jalapenos, all fresh of course, plain broccoli, or a cup of plain black beans. I remember the horror I used to feel in elementary school when all my friends would have Lunchables and juice boxes and I had a Tupperware of plain salad with a little side of olive oil that had spilled everywhere or just an avocado and a knife. As a kid, it was horrifying. I was never deprived, but still, I was always fed healthy foods. This corn chowder was one of my favorite dishes that my Mom made for me growing up because it was creamy, filling, warm, truly delicious and also healthy. To this day I still have never had a better soup. This recipe means a lot to me because it comes from my Mom, and I’m so glad to share with you guys. I hope this soup fills you with as much joy and comfort as it did to me growing up and to this very day!
I must admit that I never met a chip I didn’t like. It doesn’t even matter what kind, I never discriminate. But my love for chips is plagued by calories, fat and too much sodium, so the relationship is a love-hate one. Every time I indulge in this salty snack, I am left with feelings of regret and a bellyache. However, don’t worry! There’s a healthy alternative for all of you who love chips as much as I do! Eating salad is not always guilt-free, because the dressings often used are more fattening than eating something totally junky. I usually use balsamic vinegar and olive oil to ensure that I’m being completely healthy when eating salads, consequently making the salad boring and unappetizing. And then everything changed… Along came a dressing so delicious, so satisfying and completely healthy! Even if being healthy wasn’t my agenda, I would still covet this stagnant salad savior – and I guarantee you will too!
