Avocado Toast with Lime

Today was very green. Breakfast was a kale smoothie, lunch was avocado toast, and dinner was salsa verde. It rocked and it was healthy. Avocado toast has been one of my favorite foods since birth. I came into this world eating avocado, it is in my DNA. Avocado toast with a little lime, sea salt and a few chili flakes is really truly magical – it’s up there with grilled cheese for me. Anyways I know it is simple but I love it SO much I had to shout it from the rooftops by sharing with you. Enjoy!

The most mind blowing sticky buns of all time!

Thank goodness it is finally the season of big sweaters and dark colors, because this is about the most unhealthy thing you could possibly make. But, for your tastebuds, it is the best. These are  sort of like cinnamon rolls recipe, except these rolls are soaked in caramel and butter and sprinkled with cinnamon and apples – they’re caramel apple cinnamon rolls! This is perfect comfort food, a sweet treat to surprise a friend with, or just a way to make your family really, really happy. I promise, you will love these even if you are not a fan of caramel. The Best Pancakes Ever!

Normally, if someone told me, “eat ricotta pancakes,” then I would tell them to get a life. But this morning something changed. I made them, and I was wrong: they aren’t crazy, but delicious. A few days ago I had a conversation in my head that went something like this: “The world loves pancakes, and I am no exception, therefore I want to make the best pancakes ever.” I proceeded to do some research about what makes pancakes so popular and I started to think about what I thought would make pancakes super cool. I came to some pretty tasty conclusions. I found out that the world really does love ricotta pancakes, and it’s not as crazy as it sounds. Although I was hesitant, I decided to try them out. Oh silly me! I thought that the pancakes were going to taste like big fatty cheese blobs. I don’t know about you but when I’m eating pancakes I want to go all-out sweet. I’m talking obscene amounts of syrup. And bring on the chocolate sauce! Bring on the berries! How about some sugar and cinnamon? Come on, I don’t care! The options are endless. Being the curious person that I am, I wanted to know about the worlds fascination with ricotta pancakes so I decided to make my own. Let me tell you, was I wrong about my hesitation! The ricotta does nothing but add moisture and glorious love and joy to each bite. You might say, “Come on, that’s a little extreme!” But really, ricotta pancakes are hyped up for a reason and I think you’re really lame if you don’t give them a try. I was scared about the ingredients, but they really are the best pancakes ever. Let’s do this people, and let’s do it together! Join the masses, join the trend and make these delicious ricotta and lemon pancakes.

Blueberry Bundt Cake

I love making bundt cakes because they ALWAYS look beautiful. You do not need to spend time frosting, and you don’t need to stress out that its going to be lopsided; its guaranteed to come out looking like a masterpiece. This blueberry bundt cake is super moist and very easy to make. The pop of color from the blueberry makes it extra beautiful and delicious. I cannot wait to serve this for breakfast or drop it off to a friend as a sweet surprise.

September, and the coming of Fall, is my favorite time of year. Even though summer is over, the Southern California sun still seems to shine brighter and even the days seem to become warmer. With our late Indian summers comes a new sort of stillness in the air as we excitedly welcome fall delicacies, pumpkins and start to think about Halloween. I love seeing the shelves fill up with spooky treats, costume shops start to open around town and seeing summer’s bright colors traded out for darker wardrobes of black and burgundy. This surely is a beautiful transition that I look forward to each year. All these changes also apply to what we eat! Where summer is about eating light and feeling refreshed the fall welcomes warm, heartier foods. These muffins are the perfect marriage of this transition: they embody the warm and hearty feeling of fall and yet the bright splash of blueberries and raspberries make them light and moist reminiscent of the summer we leave behind. I can say with confidence the best muffins I have ever made. I will surely be making these as a staple in my home the rest of my life. Enjoy!
