I have been SO behind on blogging ! It was my birthday so I had a week full of activities and cooking took the back burner.
Today I wanted something light and tasty, something like bruchetta except not. This is totally healthy, light and tasty. It is filled with basil, bell peppers beans, parmesan, garlic and tomatoes it has just the perfect amount of kick. This is perfect for a picnic, or a light snack, so enjoy it!
I love taking pictures. I love taking pictures so much, and often, that sometimes I forget to live in the moment. My boyfriend constantly reminds me that memories are more important than pictures, and I am really trying to learn! Butttttttt… I am lucky enough that my boy loves me and embraces my annoying tendencies to the fullest. True to this he bought me an original Polaroid camera! I can honestly say I have not felt so giddy about a gift since I was 10 years old. I cannot wait for the unique pictures I will take using it in Italy. Here are some pictures I have taken thus far! Summer means lots of things. One being, it is finally time to eat outdoors. This is the season that you gather up your friends and loved ones and feast under the soft sunshine. Embracing the breeze, taking advantage of the longer days and eating simpler meals consisting of fresh produce.
Today was my ideal day, it involved close to everything I love. It started with Starbucks and antiquing with my Mom. I found some vintage cookbooks from the 1940’s not only were they aesthetically pleasing, but filled with wonderful recipes and old notes from the original owners. I came home and made dough for a tomato galette. My boy came over and surprised me with an abundance of peonies and baby roses, the key to my heart. 5 o’clock rolled around and we headed to Los Arroyos a Mexican restaurant to get massive burritos filled with pico de gallo. We ate them at butterfly beach and watched dolphins jump and the sun set. This is the second day in a row we chose to eat under the sun.
I came home to finish my galette and relax at home, I have a new Bon Appetit magazine I plan to read while watching some Law and Order SUV.
Today was wonderful, filled with simple things that make my heart very happy! How come simple things seem so much sweeter in the Summer?
Today I had a delicious picnic with the love of my life at the mission to celebrate the start of summer.
We had a caprese salad with avocado and beets, artichokes with a whipped feta dip and an apple pomegranate galette.
The food was glorious, and the sun was shining it was a great evening! To make things even better I wore my new bunny blouse that my sister Genevieve appropriately gifted me. I love summer !
There is a little family that shows up once a week at my door, we call them the fruit boys. They show up with boxes upon boxes of fresh produce and charge us no more than 20 bucks for a huge haul of assorted fruits and veggies. This week among many other things we got a flat of glorious mango’s so dang good. So I decided to make some mango cupcakes and to my surprise they are really moist and really delicious. My friend who graduated culinary school and is the totally baking queen, could not get over how moist and tasty these were. AHHH that felt good.
p.s. you don’t need fresh mango’s, frozen will do.
Since I was a kid I have been making this exact sandwich, elementary school till now. It is my favorite, possibly one of my all time favorite meals. I hope you enjoy!
I love lime, I love salt and I love french fries, so this is a good situation here. Making fries at home is so easy, and always make for a special night because they are oh so…..carby. The lime salt takes the french fry experience from a 10 to a 11. (Thanks Jason Diamond)

I am going to Rome this summer (ahhhhhhhhhh!!! dklfja;lejf;a) so I have been on the lookout for good shoes. Of course, I have been advised and scolded by many that I need to get a good pair of walking shoes. Ya right. That is all I have to say about that one. Of course I will get some version of walking shoes, that will most likely include a wedge.
Any ways what does this have to do with these lovely shoes? I was wandering around the mall and found these, pretty much exact replicas of the Valentino works of art I have lusted after for so long. I will be debuting these in Rome, I chose to reserve. What do you choose?
I have had a hauntingly large amount of Bananas for over a week now. This morning nothing sounded better than banana bread, luckily I was not short on bananas.
This is the moistest, tastiest spin on banana bread topped with a cinnamon streusel. I absolutely love it! Enjoy
See, I was not lying. A family friend gave us these from their back yard!
This cake was really stepping out of my comfort zone, ingredients wise. But to my surprise it is really really tasty. The cake is moist, spongey yet dense. I could defiantly see my self picking at this all day till the pan is empty.
So good and easy to make!
